The olive oil hydrometers form part of the BS 718 : 1991 density hydrometer range which is generally aligned with ISO 387 and ISO 649. Those most suited to olive oil production have a range of 0.90 to 0.95g/ml and are available in three lengths. The density reading of these hydrometers helps calculate the weight of the oil per litre and determine how pure it is. One litre of pure olive oil weighs around 920g. (density of 0.920). A tiny amount of water is always present. If the density is close to that of water, and is between 0.920 and 1, the olive oil is not pure and contains a lot of water. The reading is taken by plunging the hydrometer into the oil and reading the level indicated at the oil level.
